Types of Mycotoxins
Several hundred mycotoxins have been identified, but the most significant ones in terms of human and animal health include:
• Aflatoxins: these are among the most carcinogenic substances known and are often found in improperly stored staple
commodities such as wheat, maize, rice, and peanuts.
• Ochratoxin A: Often found in cereals, coffee, dried fruit, and wine, this mycotoxin is produced by Aspergillus and Penicillium species.
• Trichothecenes, Deoxynivalenol (DON), and T-2 Toxin: These are produced by Fusarium species and are commonly
associated with cereals like wheat, barley, oats, and maize.
• Zearalenone:* Also produced by Fusarium species, it mimics estrogen and can cause reproductive problems in animals.
• Fumonisins: Found primarily in maize and maize products, these toxins are produced by Fusarium species and are associated with diseases in livestock and possibly humans.
Health Effects
The health effects of mycotoxins vary depending on the type of toxin, the level of exposure, and the individual’s age and health. Effects can range from acute poisoning to long-term health effects such as immune deficiency and cancer. Children are particularly vulnerable to mycotoxins.
